The Bachelor of Science Degree in Restaurant Management is designed for the student that is seeking upward mobility in foods-based industries, including restaurants, hotels, catering, food sales, food production and distribution, and nonprofits specializing in foods. Additionally, students have options to include wine studies, beer studies and urban agriculture classes to complete their degree. The Bachelor of Science Degree in Restaurant Management provides a broad-based knowledge in 1) culinary arts, 2) wines, beer and spirits, 3) several levels of accounting, 4) human resources, 5) legal issues, and 6) strategic management and leadership.
Graduates of The Bachelor of Science Degree in Restaurant Management program will be able to:
- Acquire a basic understanding of the structure of the hospitality industry.
- Demonstrate specific culinary skills through multiple cooking classes.
- Articulate the differences in a variety of beverages, Including non-alcohol beverages, wines, beer and spirits.
- Interpret profit and loss statements, and be able to take corrective action if necessary.
- Develop a concept for a restaurant, cafe, food truck or similar operation.
- Collaborate with team members, or effectively work independently.
- Differentiate the need to understand human resources, legal aspects of hospitality, and contractual arrangements.
- Work in a variety of settings, including hotels, restaurants, catering operations, food sales and distribution, wine sales and related industries.
To be awarded a degree a student must complete the following:
- All departmental requirements as outlined below.
- 34 minimum credit hours of General Studies courses to include 3 credit hours of the Global Diversity requirement.
- 0-3 credit hours of the Multicultural graduation requirement
- 51 credit hours of Major Core requirements.
- 15 credit hours of concentration in either Food Operations or Beverage Operations
- 20 additional credit hours: can be any combination of an additional RST concentration, other minor or electives
Departmental Requirements:
- Declare the Restaurant Management Major.
- Present verification of 600 clock hours of on-the-job experience in the RST major prior to graduation. These hours may be secured through paid job experience, verified volunteer experience, cooperative education, internships or a combination of the four.
- Present a valid Adult CPR and First-aid Certification prior to graduation.
- Maintain a grade point average of 2.5.
A grade of “C” or better is required for courses in this program to count toward the bachelor’s degree. Students should note that programs throughout the university may have different minimum passing grade requirements.
