Description: In this course, students examine the theoretical dimensions of sustainability and how those theories apply to the hotel, restaurant, tourism, and event industries. Using regional, national, and international case studies, the course identifies the relationships among tourism activities, cultural issues, ecological systems, economic opportunities, and resource utilization.
