NUT 2060 - Nutrition, Food, and Social Justice in the United States



Credits: 3

Description: Students learn about the food system, how food is delivered in the United States, and the concept of justice in food. Students explore how Social Determinants of Health interact with our food system and how that interaction results in food injustice. Specific examples of injustice in the food system are explored, including intentionally manufactured food deserts, food apartheid, systemic racism in the food system, white-centering, and health disparities. Students are challenged to consider the role white supremacy and white-centering play in our food systems and food-related health outcomes. Critical Race Theory and Intersectionality will be discussed as they relate to nutrition, food, health outcomes, and social justice.
